This applejack is double distilled on the same farm in New York State’s Hudson Valley that the fresh apples used to make it are grown. The apple distillate is aged in 50 gallon ex-bourbon casks for two years prior to bottling. The name honours the man who has pressed the apples for over 30 years.

It requires over 60lbs of apples to make one bottle of Cornelius Applejack.

Appearance:

Clear, pale straw.

Aroma:

Apple juice and vanilla with notes akin to banana chews and custard creams.

Taste:

Dry vanilla influenced toasted oak with baked banana, apple and barbeque charcoal. Yong and fresh tasting with peppery bite.

Aftertaste:

Strong vanilla woody notes to the palate, heavily influenced by. Waxy notes emerge with a burst of green apple in the still banana influenced finish which ends with a corn dryness.
