This XO cognac is a blend of Grande Champagne and Petite Champagne (aged between 15 and 30 years) with approximately 12 to 18% Borderies at over 30 years old.

In 1984 Courvoisier's tasting committee were looking for something special to create a new blend particularly aimed at the Asian market. Coincidently a small family producer which they had dealt with for many years sent them a sample of Borderies eau-de-vie. Blending a touch of this with Fine Champagne proved something of a revelation and the result was XO Imperial.

Appearance:

Clear, dark chestnut brown amber with burnished copper highlights.

Aroma:

Spicy cinnamon, dark chocolate, vanilla crème brûlée with orange, dried apricots and stewed pear.

Taste:

Slightly honeyed/candied with Christmas cake fruit, stewed fruit, oxidised port wine, cinnamon and crystallised ginger.

Aftertaste:

Long, cigar, fruit cake, slightly burnt raisons and spice.
