Sugar cane juice is allowed to slowly ferment over 24 hours, then distilled to around 70% alc./vol., then rum slowly reduced to bottling strength by the addition of demineralised water over a period of six to eight months.

Clear and transparent.
Sweet, pungent, grassy nose with melon fruit, honey, chimney soot and beguiling estery aromas.
Clean with fresh honeyed sweetness of grassy pure sugar cane juice, subtle poached pear/melon fruit, cinnamon and a pinch of chili pepper spicy heat.
Burnt toast spread thinly with honey and a dusting of bitter cacao.
