A certified organic, 100% agave from Espadín (Agave angustifolia) with 3 local subspecies of wild agave karwinskii (Tripón, Barril and Largo) from the Valles Centrales, Oaxaca.

Distilled by Don Lorenzo and Eduardo Ángeles in Santa Catarina Minas, Ocotlan, Oaxaca using natural fermentation in open oak vats and then double distilled in 80-litre earthenware pot stills.

Appearance:

(Bottled 2004, batch L001) Crystal clear.

Aroma:

Strangely attractive whiff of farmyard/dung to the smoky nose with a slight breeze from the apple orchards beyond.

Taste:

Superbly balanced and incredibly soft with ripe fruit, hickory smoke and black tea flavours all vying for attention.

Aftertaste:

Medium length finish delicately fades as an even mellower version of the palate.
