Released 12-May 2014, this fourth edition of Kilchoman’s 100% Islay was distilled 2009/10 and aged in first fill ex-bourbon barrels (32 five year old and 8 four year barrels) until being bottled in May 2014 without chill-filtration or caramel colouring.
As the name suggests, all parts of the production process were carried out at the farm distillery, from growing and harvesting the barley to bottling. 100% Islay has a lower peat level than other Kilchoman releases.
Sampled on 18/05/2014
Clear, pale straw yellow.
Moderate peat smoke and salt with peach pie, caramel shortbread, dried fruit and orange peel. More citrus emerges with water.
Soft peat smoke, tobacco leaves and lemon zest with vanilla and sea salt. Water exposes slight sweetness which perfectly balances saltiness.
Delicate smoke, old leather, salt and zesty lemon. Incredibly good for a malt of such a tender age.
