Yam syrup at the Swizzle Stick Bar

What could be more Southern than the taste of sweet potato? We called in at the Swizzle Stick Bar at Loews Hotel in New Orleans, where bar chef Lu Brow took us back-of-house to show us her recipe for yam syrup and to reveal how she pairs it in the bourbon-based Casserole Cocktail.

The Swizzle Stick Bar is also home to Fire in the Hole - a bar trick involving an empty Maker's Mark bottle, a straw and a lit match. That will have to wait til next time. It's probably illegal anyway...

Casserole Cocktail
Glass: Rocks
Garnish: Grated nutmeg
Method: Stir and strain over hand-cracked ice
2oz Woodford Reserve bourbon
1oz Sweet Potato Syrup
0.5oz Lemon juice
0.5oz Orange curacao
