How to make:
SHAKE all ingredients with ice and strain back into shaker. DRY SHAKE (without ice) to emulsify and fine strain into chilled glass.
2 1/2 fl oz | Light white rum (charcoal-filtered 1-4 years old) |
3/4 fl oz | Fino sherry |
1/4 fl oz | Luxardo Maraschino liqueur |
1/4 fl oz | Lemon juice (freshly squeezed) |
1/4 fl oz | Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix) |
1 dash | Angostura Aromatic Bitters |
1/2 fl oz | Pasteurised egg white or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer |

Adapted from a drink created in 2008 by Scott Ingram at MC Bar, Abode Hotel, Glasgow, Scotland. The name is a reference to the year when Facundo M. Bacardi established his first distillery.
