A 40-year-old bar has been rejuvenated to create one of the world's best bars. A bar where modernity, Japanese bartending techniques and attention to detail, mixed with New York cocktail culture and a sherry-led Spanish neighbourhood bar, are brought together with a generous dose of hospitality.
The same designer of the former bar (Casa Pueblo, which opened in 1983) was behind the refurb, and there are some brilliant details, such as the mini luggage rack under the bar. There's a touch of a luxurious five-star hotel, but Devil's Cut successfully retains a neighbourhood bar feel.
Devil's Cut is one of Shingo Gokan's stable of bars, hence the Japanese and New York influences, and the menu includes the brilliant Sixty Forty cocktail from his Sip & Guzzle bar in New York. If you've not tried this cocktail that at first sip is a Martini but finishes as a Manhattan, then be sure you do. And, if visiting this Madrid outpost, then also be sure to enjoy a Jamón Iberico Fashioned.
