Bier des Grottes literally translates as ‘beer of the caves’, a reference to caves at Kanne, close to Maastrict where this beer is aged. This top fermented ale is cave aged and then bottle fermented in a process similar to that employed in making champagne.
At the time of bottling, the unfiltered beer is dosed with fresh yeast and sugar. The dosage causes a secondary fermentation. The bottles are then turned on specially designed racks (pupitres) so that gravity drives the yeast towards bottle’s cap. Finally, as with champagne, the beer is 'disgorged' by freezing the bottle neck and the frozen plug of yeast removed before the bottle is resealed.

(use by 18.12.14) Hazy, strong black tea colour with thick lasting tan head leaving heavy lacing.
Fruity yeasty nose with pine hop aromas and richly chocolaty mocha coffee.
Somewhat fruity with subtle chocolate, mushroom and hazelnut flavours.
Dry mocha coffee finish with more fruit and nuts.
