This full-bodied mahogany coloured El Supremo Rum is distilled and double matured for 12 years in Asuncion, Paraguay.
El Supremo Rums are made from the honey-like sugary juice pressed from hand-cut sugar cane, which thrives in the tropical climate and fertile soil of Paraguay. The distillery sources sustainably gown cane from local farmers.
The cut sugar cane is transported in carretas pulled by oxen to the distillery, where it is milled to extract the juice, which is then filtered and reduced in large vats over open fires for nine hours until it reaches a honey-like state. The honey is left to ferment for three days before being distilled in a copper column still.
The rum, known as Caña Paraguaya is reduced from distillation strength using spring water from the Guarani Aquifer, the world's second-largest catchment of fresh groundwater. It is then transferred into towering vats made of Incienso Marrón wood for ageing. It's this native Paraguayan wood that imparts its distinctive caramel, toffee and nutty flavours to the rum as well as turning the clear spirit to a deep amber.
After a number of years of vat maturation, the aged rum is transferred into French oak casks for a final aging period.
Finally, the aged rum is shipped to France for bottling, unfiltered and without additives or colouring.
