Old Raj gin is made using the two-shot method. Firstly, a gin essence is prepared by steeping juniper, coriander seeds, angelica root, orris root, cassia, almond powder, lemon peel and orange peel in a mixture of alcohol and water for 36 hours, then distilling the results in a small pot still.
This concentrated essence is then blended with grain neutral spirit: it is infused saffron which gives Old Raj its pale yellow colour.
