Dillon rum is named after Arthur Dillon, an Irish Jacobite soldier who is renowned in Martinique for his part in the expulsion of the English from the island.

The plantation was established by the Girardin de Montegeralde family into which Dillon married. In 1857 the mayor of St Pierre took over the plantation and built a distillery.

Dillon rums are distilled on Martinique and then shipped to France, where they are aged by Bardinet, who now own the company.
