Made from first press sugar cane juice fermented for 60 hours at 14-20°C and, unlike Dictador 12- and 20-year-old, it is 100 per cent column distilled. XO Perpetual is aged in a combination of 60 per cent ex-bourbon barrels, 20 per cent ex-sherry butts and 20 per cent port casks.

It goes into cask at the low strength of 72% alc./vol.

Appearance:

Clear, burnished copper golden amber with green tinges.

Aroma:

Oaky, citric mocha coffee with vanilla, leather, leaf tobacco and India spice.

Taste:

Spicy pallet with olive oil, spicy oak and curry spice.

Aftertaste:

Spicy, nutmeg, fudge and spicy chocolate finish.
