This “gin-head style American gin” (that’s how the producer labels it), is made using a 50 gallon copper pot still which has a “vapour basket” which holds the botanicals suspended above the liquid, infusing the vapours as they travel up the head of the still.

Appearance:

Crystal clear.

Aroma:

Orange and lemon marmalade citrus with lemongrass, lavender, camphor, sage, nutty balsawood and freshly cut celery.

Taste:

Piney juniper is very present in a very the fresh floral palate with almond nuttiness, lemongrass, lemon verbena and celery.

Aftertaste:

Hop-like/celery continues, heavily influencing the pine and white pepper finish. Full flavoured and slightly brash but with very attractive celery notes which I think come from generous use of angelica seeds.
