Kellery cherries are put into oakwood or chestnutwood casks with 1 1/2 year old lambic beer, allowed to ferment for a few months, then bottled and sealed with both a driven cork and a cap. “To be drunk preferably within ten years of bottling date.”

Appearance:

(bottled 3-Apr-12) Hazy dark cherry red with quickly fading pale pink head.

Aroma:

Earthy sour cherries and cherry jam.

Taste:

Dry, citric sourness and tart –very tart sour cherry, sour rhubarb and freshly lemon juice. Creamy carbonation.

Aftertaste:

Sweet and sour cherries and lingering bitter yeast. A few aficionados will appreciate and adore this - most will hate.
