Aged for 13 months in medium char American and French oak casks, this añejo mezcal is produced from Espadín agave cooked in a earth pit using both mesquite and eucalyptus wood. The roasted agave is then milled by tahona and fermented in oak vats before being double distilled in small copper stills.

Ilegal (pronounced 'eeh-lay-gal')" is so named after John Rexer was unable to import his mezcal into the USA under the name 'illegal'. The wax-sealed bottles have a parchment-style label and are hand-numbered.

Appearance:

Clear, golden amber.

Aroma:

Roast agave, aloe vera, soldering wood, smoky bacon, white and black pepper, vanilla and tonka beans. Faintly floral.

Taste:

Earthy, black peppery spice, light chilli heat, vanilla, mint and smouldering rosemary with slight saltiness and faint orange zest.

Aftertaste:

Smoked agave, white pepper spice, earthy dry oak, faint chilli heat, peppermint and white chocolate.

Overall:

An intense, complex and yet approachable and well-balanced añejo mezcal.
