Made using 100 per cent wild Agave Tobaziche (Agave karwinskii) from the Valles Centrales - naturally fermentated in open pine vats and double distilled in copper pot stills.

Appearance:

Crystal clear.

Aroma:

Cedar wood, cedar smoke nose with plant sap and eucalyptus.

Taste:

The merest splash of water yields a slightly smoked, woody, vegetal, slightly salty palate with pear, sweet quince and aniseed.

Aftertaste:

A salty, smoky finish - raises the question why no one has produced mezcal-flavoured crisps.
