Said to be the only pastis produced in the UK, Tarquin’s pastis is made in batches of 300 bottles using a direct fired copper pot still called Tamara. Each bottle is hand-filled, labelled, wax-dipped and signed by Tarquin.

Tarquin flavours his pastis with an infusion of Turkish green aniseed, Uzbekistan liquorice root, Bulgarian coriander seeds, juniper berries, Polish angelica root, Moroccan orris root, Guatemalan cardamom, Madagascan cinnamon, gorse flowers handpicked on Cornish clifftips, orange, lemon and grapefruit zest.

Appearance:

Hazy, pale milky golden. Louches creamy white with water.

Aroma:

Aniseed and fennel with black liquorice, very gentle spice and dried orange zest. Water brings oak barky cracked black pepper spice and herbal complexity.

Taste:

Aniseed, star anise and earthy liquorice. Water builds green fennel notes but go easy – too much water and you’ll turn bland. Tarquin recommends 5 parts water to 1 part pastis.

Aftertaste:

Star anise, then liquorice.
