Adam Elmegirab is a bartender-turned-consultant with his own bitters line under the brand name Dr Adam Elmegirab. Spanish bitters are his reformulation of an 1800s blend containing overproof spirit and eight botanicals including chamomile, orange peel, lemon peel, coriander seed and orris root.

The botanicals are left to macerate in the spirit for no less than two weeks and the mixture is then reduced to bottling strength with Scottish water and coloured with caramel.

Appearance:

Slight haze, Indian gold.

Aroma:

Pungent nose with chamomile, fusil oil, cardamom (cola), honey and dried orange zest.

Taste:

Bitter palate with rummy fusil oils, Seville orange, marmalade and pine.

Aftertaste:

Bitter notes build through the finish, led by chamomile and followed by liquorice (orris root) and quinine-style dryness.
