Double pot still-distilled from fermented New York corn and bottled without aging, so according to E.U. laws not actually a whiskey at all. In the U.S. such un-aged 'whiskies' are also known as white dog and moonshine. With maturation, this same 'new make' spirit becomes Hudson Baby Bourbon.

Appearance:

Crystal clear forming tight beads with slow falling thin legs.

Aroma:

Yeasty, bread dough nose with sawdust (clean hamster cage) raw corn-on-the-cob just stripped-of-its-leaves aromas, unsaltled unbuttered popcorn.

Taste:

Lightly spiced, cereal palate with fried corn flavours, a faint fruitiness and bitterness.

Aftertaste:

Red pepper finish with heavily toasted/slightly burnt corn bread and lingering cracked black pepper spice.
