This flavoured sugar syrup is named after and inspired by the traditional Spéculoos biscuits found in the Netherlands, Germany and Northern France and traditionally baked for consumption on or just before St Nicholas' feast in December.
Spéculoos are shortcrust biscuits with cinnamon and other spices including white pepper, ginger, cardamom and nutmeg.
