Part of Del Maguey’s Vino De Mezcal series, this mezcal is produced only using wild Papalometl, a variety of maguey named in Nahuatl for the butterfly (papalotl). Its scientific name is agave Cupreata and it resembles a giant Tobala maguey.

Del Maguey Wild Papalome is made by Fernando Caballero Cruz at San Pedro Teozacoalco Village in the Mixteca Alta region using a stainless pot still with a clay condenser and Carrizo (Mexican bamboo) tube.

Appearance:

(sample bottle Lot: PAP-131) Crystal clear.

Aroma:

Meaty and woody with leather, smoke and cracked black pepper. More subtle black berry, black olive and pomegranate notes.

Taste:

Smoky bacon, maple syrup with mushroom, leather, cracked black pepper spice, sweet black olives and cleansing acidity.

Aftertaste:

Smoked leather and streaky bacon with black pepper spice.

Overall:

Savoury, meaty and leathery with black olive and cleansing smoke and peppery spice.
