This dry oloroso sherry is made from 100% Palomino Fino grapes and is aged an average of 8 years in American oak casks in a traditional Solera system.
The Palomino Fino must destined for Alfonso comes from the second pressing (using pneumatic Wilmes presses) and following fermentation to 11%- 12% alc./vol. , the wine is fortified to 18% alc./vol. and then enters the Alfonso solera where the wine is allowed to oxidise. Alfonso remains in American oak casks in the traditional solera for an average of 8 years.
