Review and Tasting

Sampled before 1st May 2011

Appearance:

(cut to approx 45% abv) Deep mahogany in colour.

Aroma:

Sherry-laced, dried-fruit, rich, Christmas cake served on slightly burnt toast with a touch of clarified butter and rubber.

Taste:

Savoury and yet sweet full-bodied powerful palate. Spiced meat stock, tannic oaky dryness and smoky notes are served with and countered by caramelised dried fruit and dark tangy honey.

Aftertaste:

The fruit fades to leave a dry oaky, faintly smoky finish with pleasing hints of treacle.
