A blend of 60% Chardonnay, 20% Chenin Blanc, and 20% Cabernet Franc, blended after the first fermentation. Bottled with a dosage of cane sugar and yeast, causing a second fermentation in the bottle. The wine is the cellar aged on-the-lees for at least 36 months prior to disgorging and re-corking.

Clear, Pale golden yellow with streams of small bubbles.
Green grapes and overripe pear, zesty lemon and lime, floral elderberry and very faint smoked almond.
Faint honeyed and ripe pear sweetness balances crisp dry acidity with brioche, green apple, zesty lemon, biscuit, and faint floral notes. Attractive notes of buttery chardonnay.
Long, dry finish with cleansing acidity, lemon freshness and light biscuit.
Light, fresh, well-balanced, easy drinking "Traditional Method" sparkling wine which is perfect for summer drinking. Characterised by with pleasing biscuity/brioche notes, zesty lemon/lime and faint floral complexity.
