A semi-dry mead made with honey from New Zealand fermented, infused with sage and matured in oak casks. Petersen & Sønner say “the bottle can be kept for months after opening without turning bad.”

“Sediments can occur over time, but should be dispersed by shaking the bottle to obtain the fullest flavour.

Appearance:

Slightly cloudy, golden amber.

Aroma:

Dark honey, brown bread, raisins, buttered scones, vanilla, hazelnuts, vanilla, double (heavy) cream and fruit cake with lightly bitter herbal notes.

Taste:

Raisins, sultanas, fruit loaf, sweet baked apples and subtle cinnamon spice.

Aftertaste:

Light black pepper and cinnamon spice, raisins, sultanas and vanilla honey with lightly bitter herbaceousness.

Overall:

This complex and flavoursome mead balances sweet honey notes with bitter herbs and fino-sherry like vinous notes.
