Dewar’s “double-age” their whiskies by re-casking them for a marrying period after blending. In 2019, Dewar’s Master Blender, Stephanie Macleod, extended this to create her own 4-stage process known as Double Double ageing. This example including a finishing period in Pedro Ximénez sherry casks.
Four Step Ageing Process
Step 1. Single malt and grain whiskies that will comprise the blend are aged in their respective casks.
Step 2. The casks of malt and grain whiskies are each blended and then re-casked with blended malt and blended grain whiskies continuing to age separately (for approx. 1 month).
Step 3. The blended malt and blended grain whiskies are blended together and then re-casked to age for a third time (for approx. 1 month).
Step 3. The whisky is transferred to sherry casks for a final finishing period – in this case, in casks seasoned with Pedro Ximénez sherry (for approx. 1 month).
The distinctive squat four-sided “unique trapezoid style” bottle with its debossed print label was chosen to emphasise the 4-stage ageing process.
Bottled without chill-filtration or added caramel colouring.

Appearance:
Clear, mid-golden amber.
Aroma:
Green apple, vanilla, toasty oak, cigar box, clove and faint smoke.
Taste:
Rich raisiny sweetness, light smoke and spice – nutmeg, clove and white pepper.
Aftertaste:
White pepper, nutmeg, clove, caramel, new leather, oak and charcoal. Fades with faint menthol.
Overall:
White pepper, nutmeg, clove, caramel, new leather, oak and charcoal. Fades with faint menthol.
