Aged for 2 to 3 years in American oak barrels previously used to age Four Roses bourbon. Prior to filling with cachaça, the ends are removed from the barrels and the insides flayed to reveal fresh wood which is then lightly toasted. The tropical heat of the rainforest accelerates maturation.

Appearance:

Clear, mid-golden amber.

Aroma:

Toasty oak, hay, banana bread, blackened nutty fruitcake, cacao and cinnamon with roasted coffee beans and honey.

Taste:

Dry toasty oak and dry grassy notes with cinnamon, black pepper spice, vanilla and coconut.

Aftertaste:

Coffee notes emerge in the dry oaky finish with banana cake and gingerbread.

Overall:

Novo Fogo's signature grassy sweet red pepper notes sit well with the cinnamon spice, vanilla, and the toasty oak imparted by aging.
