Cotswolds Dry Gin distilled to 83% alc./vol. is diluted to 65% before going into Cotswolds STR casks (first-fill ex-Bourbon barrels and shaved, toasted and recharred red wine casks) to mature for three months.

After aging the gin is infused with fresh Valencian orange peel and candied root ginger "for several weeks, getting a good stir every few days." A touch of honey "to sweeten and dilute" to 46% alc./vol. is added prior to bottling.

"This is a rich and warming sipping gin, perfect neat or over ice. The addition of a few drops of Angostura Bitters adds a delicious extra element, or for chillier winter evenings, try adding to warmed apple juice."

Appearance:

Clear, mid golden amber.

Aroma:

Piney juniper, crystallised ginger and flamed orange zest with faintly smoky toasty oak.

Taste:

Sweet and spicy. Classic juniper-led gin flavours are enlivened but fiery ginger spice and freshened by orange oils.

Aftertaste:

Long. Hot ginger and piney juniper with faint orange.

Overall:

Gin and ginger are a brilliant pairing, made all the more delicious in this enlivening gin by toasty oak, sweet honey and zesty orange. Be sure to have some in a hip flask for cold winter days out.
