The third in Redbreast's Dream Cask limited-edition series was released 16th May 2020 and is the first Redbreast expression to be fully finished in a single port cask.
This is a vatting of 4 casks (see below), each aged for a minimum of 28 years and then married in a ruby port pipe for a final undisclosed maturation period.
• Cask 1 - a single pot still Irish whiskey distilled in 1989, matured in an ex-bourbon barrel and re-casked into a ruby port cask in 1995.
• Cask 2 - a single pot still Irish whiskey distilled in 1991, matured in a second-fill ex-bourbon barrel.
• Cask 3 - a single pot still Irish whiskey distilled in 1991, matured in a second-fill ex-bourbon barrel.
• Cask 4 - a single pot still Irish whiskey distilled in 1991, matured in an ex-bourbon barrel and re-casked into a sherry butt in 2011.
Review and Tasting

Appearance:
Clear, mahogany amber.
Aroma:
Cigar box, vanilla, raisin, sultana, cinnamon and nutmeg with almond butter and red pepper. Water releases linseed oil rubbed leather.
Taste:
Rich raisin and sultana fruit are balanced by dry oak tannins with assertive cinnamon, nutmeg and black pepper spice. Pleasing dark chocolate and plum notes are amplified with water.
Aftertaste:
Long. Raisin and sultana with spicy dry oak.
Overall:
Finishing in a ruby port cask has imparted a sweet fruitiness that balances the dry oak tannins from 28 plus years of ageing. This is a huge whiskey with deep raisin and sultana notes enlivened with Christmassy spice. Available for a whopping €490 for a mere 50cl exclusively via Redbreast's own private member's club.
