Distilled from organic sotol, Los Magos ("the magicians") Sotol was founded by native Chihuahuans Eduardo Almaza and Juan Pablo Carvajal.
The piñas are roasted in a wood-fired pit for 36-48 hours, milled and then fermented in an open vat. After triple distillation, the sotol is bottled at 38% alc./vol. (76 proof).
This blanco expression launched in the USA in March 2021.

Appearance:
Crystal clear.
Aroma:
Lightly smoky, tack room leather, salt and pepper, and herbal cedarwood.
Taste:
Salty, smoky and herbaceous with citrus, cracked black pepper and an oaky note as if aged.
Aftertaste:
Spicy, salty, smoky and yet slightly sweet with yellow bell pepper notes.
Overall:
Savoury with elegant smoke and a moreish salinity. Although unaged, this sotol has a woodiness with accompanying tea-like tannins.
