Clairin Le Rocher is produced using cane syrup from Cristalline sugar cane grown in Saint Michel de l'Attalaye. The syrup is diluted until the Brix level suits natural fermentation by local natural yeast.
Dunder from the previous distillation is added during the long fermentation to increase the flavour intensity. Distillation is in a small copper pot still.
