The last red berry of the summer, the wild blackberries are only harvested when fully ripe. Joseph Cartron insists on using only wild blackberries rather than cultivated varieties to ensure the aromatic power of the fruit.
The vats are loaded with fruit up to two-thirds of their volume and then filled with pure alcohol. The infusion is carried out at room temperature and lasts four to five weeks until the colour and aromas of the blackberries have been fully extracted by the alcohol.
The infusion is decanted and carefully filtered. Crystallised sugar is slowly blended and this naturally lowers the alcohol content and amplifies fruit flavours.
Store away from light and heat and refrigerate after opening if the bottle is to remain open for several months.
