A pot-still rum distilled from fermented sugar cane juice by Leoncio Gaspar in the eastern highlands of Oaxaca, Mexico.
Camazotz is made with locally grown sugar cane, hand-pressed using a donkey-powered press to produce cane juice. The juice is fermented in open-topped wooden vats using wild airborne yeast. It is distilled to proof in small batches of up to 300 litres using a traditional alembic copper pot still.
The distillate is transported by mule 5km up the mountainside to be bottled unaged and without additives.
Camazotz Rum takes its name from the Mexican Bat God of Night, Death, and Sacrifice. The Zapotecs associated bats with death and the night as they inhabited the caves that ancient Mesoamericans believed were a path to the underworld.

Crystal clear.
Pungent, grassy, funky and agricole-like.
Grassy with nutty, woody notes and pineapple funk.
Grassy notes turn to straw in the lightly salty finish.
Mix in any cocktail calling for an agricole rum or simply serve 50ml of Camazotz with 120ml freshly extracted pineapple juice in an ice-filled glass.
