Made by Aurelio Gonzalez Tobon and his family at their palenque in the village of San Pablo Ameyaltepec, Puebla.

Here, the family roasts, mills and ferments Papalote (Tobalá) and Pizorra (Tepextate) varieties of agave. They distil their mezcal in a hybrid alembic-column still known as a resaque (reflux) still which has three plates in the head, enabling them to distil to proof with only one distillation.
