Vegg White is a vegan alternative to egg white for use in cocktails and is used as a direct substitute, used in recipes in a one-to-one ratio in place of egg white. Impressively, Vegg White can also be used to make espumas and airs.

Vegg White has a 12-month shelf life and, once opened, can be stored in a refrigerator for up to 30 days. Shake before use.

100% vegan, CMO free.

Ingredients
Water, methylcellulose, emulsifier: esters of fatty acids, emulsifier: soy lecithin, maltodextrin, thickener: xanthan gum, thickener: acacia gum, ascorbic acid, preservative: E211.

Appearance:

Opaque white .

Aroma:

Neutral smell. (Unlike the wet dog aromas associated with egg white.)

Taste:

There is little discernible taste, very faint sourness with an egg-white-like mouthfeel.

Overall:

Tested in a like-for-like recipe against pasteurised egg white in a Whiskey Sour, the Vegg White produced a marginally better foam both in thickness and density of bubbles. The Vegg White foam was also long-lasting - impressively so. Unlike cocktail foamers that used in dash quantities, Vegg White adds the same dilution to a cocktail as egg white would and also much of the mouthfeel.
