Cinnamon syrup

Words by Simon Difford

Buy proprietary brand or make your own cinnamon syrup by boiling half a cup of water with one cup of caster sugar and two cinnamon sticks which have been ground to a powder using a mortar and pestle. Use a low heat and do not let the mix even come close to boiling. Stir until all the sugar dissolves. Remove from heat, allow to cool and strain into an empty bottle.

Store in the refrigerator and use within three months.
