Each 500g carton contains 15 free range egg whites and has no preservatives, but thanks to pasteurisation Two Chicks egg white does not present the health risks associated with fresh eggs, and will keep in the refrigerator for up to seven days after opening.

Two Chicks egg white is gluten free, cholesterol free, low in carbohydrate and has a low GI.

"Ingredients: Egg white from free range chicken eggs, thickener (guar gun)." Apparently, the guar gum "makes the egg white easy to whisk."

Appearance:

Cloudy, light yellow. (Not as clear as fresh egg white)

Aroma:

Very subdued aroma with faint white dog but not as pronounced wet dog aromas as fresh egg white.

Taste:

Slightly salty with very little flavour - virtually the same as fresh egg white but with a very different, much thinner, more watery mouthfeel.

Aftertaste:

Faint saltiness with little discernible flavour. Leaves your mouth feeling fresh.

Overall:

When tested against cocktails made with the same measure of fresh egg white as Two Chicks we found the appearance and taste indistinguishable. We used the reverse dry shake method and the foamy head achieved on both (Whiskey Sour) cocktails was equally fluffy and off-white in appearance. When left there was also little difference in the retention of the foam produced by Two Chicks or fresh egg whites. However, our test revealed the importance of shaking the Two Chicks carton prior to use. Given the comparative ease and the safety benefits of Two Chicks, for cocktail use we prefer it to fresh egg whites.
