Launched in June 2012, and as the name suggests this sugar syrup from Monin was inspired by Black Forest (Gâteau) Cake, the English name for the German dessert Schwarzwälder Kirschtorte, which translates as ‘Black Forest cherry torte’.

This multi-layered chocolate cake with whipped cream and cherries between each layer is topped with a further layer of whipped cream, cherries and chocolate shavings. Traditionally, kirschwasser is added to the cake. In Germany kirschwasser must be added for the cake to be legally called Schwarzwälder Kirschtorte and it is from this kirsch eaux-de-vie distilled from tart cherries that the cake takes its name.

“Ingredients: Sugar, water, flavouring, concentrated cherry juice, colouring agents: E163, caramel E150a. Contains coca extract. Total fruit juice: 10% cherry juice minimum.”

Appearance:

Almost opaque, very dark maroon.

Aroma:

Dark chocolate with candied morello cherries.

Taste:

Velvety rich indulgent cherry with dark chocolate. Obviously syrupy sweet but with an element of balance from bitter chocolate and tart cherry flavours. Very reminiscent of the eponymous cake.

Aftertaste:

Dark chocolate with lingering cherry.
