A blend of Grand Crus Pinot Noir (70%) and Chardonnay (30%), with 20% of the cuvee vinified in 5 year-old oak casks. Billecart-Salmon say this champagne benefits from decanting - slowly pour the champagne so it trickles down the side of your decanter. This calms the bubbles and allows it to breathe.

Review and Tasting

Sampled on 30/09/2011

Appearance:

Clear, golden yellow with plentiful and persistent mousse.

Aroma:

Yeasty, buttery brioche with crisp green apple, galia melon, quince, citrus and dried fruit aromas.

Taste:

Wonderfully well balanced acidity on the yeasty palate with the crisp Bramley apple and melon fruit promised on the nose.

Aftertaste:

Melon fruit finally dominates the apple in the rewarding finish.
