Ingredients:
2 oz Caribbean blended rum aged 6-10 years
34 oz Pineapple juice
34 oz Lemon juice (freshly squeezed)
12 oz Monin Almond (Orgeat) Syrup
2 dash Peychaud's or other Creole-style bitters
2 drop Saline solution 4:1 (20g sea salt to 80g water)
12 oz Egg white (pasteurised) or 3 dashes Fee Brothers Fee Foam cocktail foamer or Aquafaba (chickpea water) or Vegan egg white replacement

How to make:

  1. Select and pre-chill a Double old-fashioned glass.
  2. Prepare garnish of pineapple & Luxardo Maraschino Cherry-charged fruit stick with mint sprigs bouquet.
  3. SHAKE all ingredients with ice.
  4. STRAIN back into shaker.
  5. DRY SHAKE (without ice).
  6. FINE STRAIN into ice-filled glass.

I think this is my new favourite cocktail. Balance is perfect. Wouldn't change a thing!

A nice Tiki sour. Not too complicated but you get rum, pineapple, orgeat and some salinity. The bitters add some body to it, although I think you could use Ango and get similar results. Next time I'll probably add some liqueur or bitters to make it more interesting.

Great drink, i think there is room for improvement , add 10 ml dram allspice !

Very nice tiki style cocktail. A little on the sweet side, but not overly. It does seem to soften once the ice began to melt, so I small or even crushed ice. Definitely worth trying and went perfectly with a Sichuan pork stir-fry dinner.

Refreshing cocktail, but try this:
0.75 oz Lime juice fresh
1 oz Orgeat
1.5 oz Pineapple juice
2 oz rum (6-10 year)
3 dashes Peychauds
Shake all ingedients with ice and strain into a icefilled rocks glass.
