Serve in a Coupe glass

Ingredients:
1 12 oz Straight rye whiskey (100 proof /50% alc./vol.)
34 oz Lemon juice (freshly squeezed)
12 oz Maple syrup
12 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of 3 drops aromatic bitters dotted across cocktail's foaming surface.
  3. SHAKE all ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice).
  5. FINE STRAIN into chilled glass.

Review:

Delightful. Very well balanced. Did use 3 drops of Angostura bitters on top of the foam. Maple add a softening of the rye and the lemon adds a nice zest of citrus. Very refreshing.
