Serve in a Rocks glass

Ingredients:
34 fresh Lime (fresh) cut into segments
1 12 oz Jamaican-style overproof aged pot still rum
56 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)
2 dash Angostura Aromatic Bitters
× 1 1 serving

How to make:

  1. Select and pre-chill a Rocks glass.
  2. Prepare garnish of lime wedge.
  3. MUDDLE lime in base of glass to release juices.
  4. POUR other ingredients into glass.
  5. Two-thirds fill glass with crushed ice and CHURN with barspoon.
  6. ADD more crushed ice to fill glass.
  7. Garnish with lime wedge.
  8. Serve with a straw.

Review:

Looks like a Caipirinha and has a similar balance of sweet, sour and spirit. The bitters bring out the spice in the rum, which is every bit as pungent as cachaça.

Enjoyable but too sweet for me. I used an entire lime instead and added 1/2oz Wray & Nephew and much prefer the result.

I reduced the syrup to a generous 1/2oz too:

Never had cachaça so I do not know what a caipirinha tastes like, but this hits the spot. I used Smith and Cross Navy strength. Wow did it pack a punch.

I threw this together after a rough day of work and it's like a Caipirinha but suits my taste more until I replace Leblon from my bar.
