Serve in a Coupe glass

Ingredients:
1 12 oz Lustau Jarana Fino Sherry
1 oz Lustau Amontillado Los Arcos Sherry
12 oz Rhum Clément Blanc
16 oz Giffard Crème de Pêche de Vigne liqueur
1 dash Peach bitters
× 1 1 serving

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lemon zest twist.
  3. STIR all ingredients with ice.
  4. FINE STRAIN into chilled glass.
  5. EXPRESS lemon zest twist over the cocktail and use as garnish.

History:

Adapted from a recipe by Jason E. Clapham at the St. Edward's MCR at Oxford. Jason suggests, adding one barspoon of "crème de pêche, for a still gentler version." I have.

We enjoyed this alongside a beef chilli, and the spicy tomato flavour really brought out the complexity and roundness of the drink. I suppose this makes sense given that drier sherries are typically drank with these types of dishes on the Iberian peninsula.
