Ingredients:
2 oz Light white rum (charcoal-filtered 1-4 years old)
12 oz Amaro Sfumato Rabarbaro
12 oz Pink grapefruit juice (freshly squeezed)
12 oz Lime juice (freshly squeezed)
14 oz Luxardo Maraschino liqueur
16 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)

How to make:

  1. Select and pre-chill a Coupe glass.
  2. Prepare garnish of lime wheel slice (dehydrated).
  3. SHAKE all ingredients with ice.
  4. FINE STRAIN into chilled glass.

This recipe has appeared out of nowhere since I bought my Amaro Sfumato a couple weeks ago. Finally made it today. Reading the comments, I went with Clement 80 proof rhum agricole. I hereby declare this the only way to go when making this. Near perfection. (29 Dec 2023, 11:31a)

I'm very oddly reminded of the various blueberry flavoured cereal bars (those nutri-k? maybe? ones. or something.) from the late 00s UK. Definitely tastier that's for sure; a lovely and complex and bitter and fruity drink with a hint of smoke.

Very intriguing cocktail, with quite the evolution. It starts out citrus, followed by a hint of sweet maraschino, and ends with dry, smoky rabarbaro. Definitely a sipper. I quite enjoyed it, but I might try to swap out the base liquor (I used Plantation 3 Stars) for something a bit more assertive, that can stand up to the rabarbaro. Maybe go all in on the smoke and switch to 1.5 tequila/0.5 mezcal?

Remade with 1.5 Oz of Afrohead rum and 0.5 of OFTD. This allowed the rum to leave more of an impression while keeping to the spirit of the drink. I considered Smith & Cross, but I don't think the funk would have worked as well in this context. I also tried a bit with Pamplemousse instead of Maraschino, and that took away some necessary complexity.

Enjoyed this. Good balance of bitterness, sharp fruit and sweetness. Very good aperitivo for an Autumn evening.
