Ingredients:
1 oz Poire William eau-de-vie
1 oz Belle de Brillet pear liqueur
1 oz Pear juice (freshly pressed)
6 drop Difford's Daiquiri Bitters
3 drop Saline solution (20g sea salt to 80g water) or merest pinch of s
34 oz Brut champagne/sparkling wine chilled
× 1 1 serving

Prepare:

  1. Select and pre-chill a COUPE GLASS.
  2. Prepare garnish of pear wedge.

How to make:

  1. SHAKE first 3 ingredients with ice.
  2. FINE STRAIN into chilled glass.
  3. TOP with sparkling wine.

Garnish:

  1. Garnish with pear wedge on rim.

Hi Simon,
No sparkling wine mentioned in the ingredients, but it is in the instructions? Tried it with and it was tasty.

Thanks for bringing to my attention, David. I've added sparkling wine to the ingredients, but best I revisit this old cocktail of mine.
