1 1/4 fl oz Pineapple juice
1/2 fl oz Lime juice (freshly squeezed)
1/3 fl oz Sugar syrup 'rich' (2 sugar to 1 water) 65.0°Brix

Prepare

  1. Select and pre-chill an OLD-FASHIONED GLASS.
  2. Prepare garnish of skewered pineapple wedge or dehydrated pineapple slice and Luxardo Maraschino Cherry.

Method

  1. SHAKE all ingredients with ice.
  2. FINE STRAIN into ice-filled glass.

Garnish

  1. Garnish with skewered pineapple wedge (or dehydrated slice) and maraschino cherry.

Made with Plantation 3 Stars. As others mentioned, this is light and refreshing. Rum, pineapple, and lime are well balanced. Not overly sweet. Great drink for a hot day.

Used these ratios:
Pineapple Daiquiri
2oz rum
1.5oz pineapple
.5oz lime
.5oz simple syrup (1:1)

Extremely delicious not sweet enough OR too limey for me. so I will either increase my syrup or decrease lime (I had huge limes so my .5 might've been .75+).

Looks 100% just like the picture when I made it. I garnished with an orange peel that I stash away for my old fashions.

I used Havana Club 3 Year Old, and it was just an absolute delight. The freshness and foam of the pineapple, the tartness of the lime, the sweetness of sugar and then the backbone of the rum just combine to make something excellent.
