Serve in an Absinthe glass or old-fashioned glass

Ingredients:
40 ml Hayman's Old Tom Gin
0.9 ml Absenteroux Vermouth a l'Absinthe
5 ml Ginger juice
5 23 dried Kaffir lime leaf
15 ml Egg white
20 ml Lemon juice (freshly squeezed)
15 ml Sugar syrup 'rich' (2 sugar to 1 water, 65.0°Brix)
