Serve in an Old-fashioned glass

Ingredients:
56 oz Belle de Brillet pear liqueur
56 oz Chairman's Reserve Spiced Rum
56 oz Pear juice (freshly pressed)
12 oz Lime juice (freshly squeezed)
13 oz Monin Pure Cane Syrup (65.0°brix, equivalent to 2:1 rich syrup)

How to make:

  1. Select and pre-chill an Old-fashioned glass.
  2. Prepare garnish of pear wedge..
  3. SHAKE all ingredients with ice.
  4. STRAIN into ice-filled glass.
  5. Garnish with pear wedge on rim.

Ground/grated cinnamon garnish works well with this.

My coktail was made of 30ml Xante Pear&Cognac, 30 ml Captain Morgan Spiced Rum, 20ml pear juice from pears in my garden, 15 ml lime juice . I was very gentle adding a few drops of sugar sirup. I am sorry say I will soon run out of pears.

Perfect Autumnal cocktail. Our pears were very sweet, so we eliminated the sugar syrup. Also mixed our Orchard Pear liqueur with a bit of pear eau-de-vie. It was wonderful.

I wanted to make this cocktail, but I didn't have two of the ingredients: pear & cognac liqueur (clearly I'll have to make some) or pear juice. Undaunted, I mashed up a ripe pear with a mortar & pestle and then squidged it through a sieve with a spoon to obtain a puree. I used that for the pear juice, and substituted pear eau de vie for the liqueur. The result is not this cocktail, but it is sublime. Call it a Sublime Pear, or something.
