Serve in a Highball (max 10oz/300ml)

Ingredients:
2 oz Patrón Silver blanco tequila
12 oz Orange juice (freshly squeezed)
13 oz Lemon juice (freshly squeezed)
23 oz Egg white (pasteurised) or Aquafaba (chickpea water) or 3 dashes Fee Brothers Fee Foam cocktail foamer
3 12 oz Thomas Henry Ginger Ale

How to make:

  1. Select and pre-chill a Highball (max 10oz/300ml) glass.
  2. Prepare garnish of Lemon zest twist and quarter orange slice wheel.
  3. SHAKE first 4 ingredients with ice and strain back into shaker.
  4. DRY SHAKE (without ice) to emulsify.
  5. SLOWLY POUR two-thirds of the shaker's contents from a higher-than-normal height into a chilled empty glass (no ice in the glass) while simultaneously pouring ginger beer with your other hand. (The cocktail and ginger ale should form a single stream of liquid falling into the glass.)
  6. As when pouring a Guinness, to achieve a perfect head, LEAVE TO SETTLE for at least a minute. Ideally, during this settling period, the glass should be placed in a freezer/glass-froster/fridge.
  7. POUR the final contents of the shaker into the glass. As you do so, the head should rise like a souffle.
  8. Express lemon zest twist over the cocktail and discard.
  9. Garnish with quarter orange slice on rim.

The first known recipe for a Young Man's Delight appears in the second, 1934 edition of G. F. Steele's My New Cocktail Book.

Ginger beer all the way. Kind of delicious. I can see having one of these with a spicy full breakfast.

I loved the construction of this drink. The extra chilling after shaking does wonders. Very presentable.
