2 fl oz Blanco tequila
1/2 fl oz Orange juice (freshly squeezed)
1/3 fl oz Lemon juice (freshly squeezed)
2/3 fl oz Egg white (pasteurised) or Fee Brothers Fee Foam cocktail foamer
3 1/2 fl oz Thomas Henry Ginger Ale

How to make

Glassware

Serve in a Highball (max 10oz/300ml)

Prepare

  1. Select and pre-chill a HIGHBALL (MAX 10OZ/300ML) GLASS.
  2. Prepare garnish of Lemon zest twist and quarter orange slice wheel.

Method

  1. SHAKE first 4 ingredients with ice and strain back into shaker.
  2. DRY SHAKE (without ice) to emulsify.
  3. SLOWLY POUR two-thirds of the shaker's contents from a higher-than-normal height into a chilled empty glass (no ice in the glass) while simultaneously pouring ginger beer with your other hand. (The cocktail and ginger ale should form a single stream of liquid falling into the glass.)
  4. As when pouring a Guinness, to achieve a perfect head, LEAVE TO SETTLE for at least a minute. Ideally, during this settling period, the glass should be placed in a freezer/glass-froster/fridge.
  5. POUR the final contents of the shaker into the glass. As you do so, the head should rise like a souffle.

Garnish

  1. EXPRESS lemon zest twist over the cocktail and discard.
  2. Garnish with quarter orange slice on rim.
